•adult individuals; of both sexes; aged between 18 and 59 years; with a Body Mass Index (BMI) greater than or equal to 40 or greater than or equal to 35 with morbidities associated with obesity such as type 2 diabetes mellitus, hypertension, dyslipidemia; who will undergo gastric bypass bariatric surgery treatment, and who will be regularly monitored by the research team

•individuals who have a medical diagnosis of consumptive diseases such as stage 3, 4 or 5 chronic kidney disease; acute or chronic pancreatitis; severe acute infections; individuals who report the use of narcotic drugs and who are using vitamin or mineral supplements during the study period; or who have special physical conditions that interfere directly, causing errors in interpretation of the parameters investigated
