Tyrosinase is a multi-copper-containing multifunctional metalloenzyme with 4 possible oxidation states. It is responsible for producing melanin pigment across the phylogenetic spectrum. Within mammals, tyrosinase is found specifically in melanocytes in a glycosylated form and plays a critical role in regulating the process of melanin biosynthesis (also known as melanogenesis). It is recognized as being the main enzyme responsible for enzymatic browning and melanogenesis in mammals, thus causing undesired browning of fruits and vegetables and diseases resulting from melanin overproduction.
