Alcohol May Trick the Brain Into Craving Junk Food via the Hormone FGF21, Study Suggests

If you find yourself reaching for a bag of chips after a few drinks, hormones may be partly to blame. New research from the University of Sydney, published in the journal Obesity (搜索), suggests that alcohol consumption may trigger a hormonal cascade that drives cravings for savory, ultra-processed foods — and may contribute meaningfully to the obesity epidemic.
The key player is a hormone called fibroblast growth factor 21 (FGF21 (搜索)). Normally, FGF21 rises when the body is running low on protein and acts on the brain to stimulate a craving for protein-rich foods. Alcohol, the researchers explain, appears to switch on this same hormone, tricking the body into acting as if it needs more protein even when it does not.
"Many people will recognize the experience of having a few drinks and suddenly craving something salty, like chips, French fries, pizza or other savory foods," said lead author Dr. Amanda Grech. "Now we have a better understanding of the hormonal dynamic at play, which may be driving overconsumption of ultra-processed foods."
The Protein Decoy Problem
FGF21 (搜索) does two things simultaneously: it boosts cravings for savory, umami flavors while dulling the desire for sugar. For most of human history, this mechanism made biological sense — savory, meaty flavors reliably signaled protein. But modern food processing has broken that link.
Today, many salty snacks achieve their savory taste through added flavorings like monosodium glutamate while containing very little real protein. The researchers call these foods "protein decoys." They taste like protein and activate the protein appetite, but they never satisfy it. As a result, consumers keep eating in search of satiety, taking in far more fat, carbohydrates, and total calories.
"Cravings for chips with a drink, a pizza at the end of a big night out, or a fry-up the next morning may be driven by the way alcohol alters the body's regulation of appetite, particularly for protein," said Professor David Raubenheimer, the study's senior author.
Evidence from Population Data
The research team analyzed Australian dietary survey data from more than 9,000 adults. The findings were striking: people who reported drinking alcohol also reported eating significantly more savory foods and fewer sweet foods compared to non-drinkers. On days when individuals drank, their savory food intake increased measurably.
People who reported drinking and consuming a savory diet with the low-protein, high-fat characteristics of an ultra-processed diet took in 40% more calories than the daily recommendation — before even factoring in the calories from alcohol itself.
"Results suggest that alcohol may have contributed to the obesity (搜索) epidemic," the researchers hypothesized, because it increases people's appetites, and those consuming highly processed foods eat more of the unsatiating food.
Resolving a Scientific Mystery
The findings may help explain why previous studies on alcohol's effect on caloric intake have produced inconsistent results. "Alcohol has different effects on total energy intake depending on the dietary environment, particularly whether diets are dominated by minimally processed foods or ultra-processed savory foods," said Professor Stephen Simpson, the study's co-author.
If a person's diet is built on whole foods, the savory craving leads them to real protein and mostly balances out. If the diet is full of decoys, the same craving drives overconsumption.
The researchers also noted a geographic pattern consistent with their theory: in countries where savory taste reliably signals protein, such as France, obesity (搜索) rates are lower. In Australia, where savory flavor predicts protein only about a quarter of the time, obesity rates are among the world's highest.
Timing and Duration of Cravings
The hormonal effect appears to have a distinct temporal profile. In earlier trials, FGF21 (搜索) climbed within approximately 15 minutes of drinking and stayed elevated for a few hours. After heavy drinking, it lingered far longer — people who drank heavily at Oktoberfest still had elevated levels three days later. The craving, in other words, can outlast the night of drinking.
Limitations and Practical Guidance
The researchers acknowledged important limitations. Their studies did not directly measure FGF21 (搜索) levels; rather, they applied previous scientific findings to interpret their observations. They wrote that they could not provide direct evidence of FGF21's role in food intake, and the research was largely based on secondary evidence from a population survey.
"Advice to limit highly processed foods, including savory snack foods, may be even more critical than previously thought for reducing the risk of weight gain among adults who drink regularly," the authors concluded.
Registered dietitian Morgan Beemiller, RD, LDN, based in Ohio, recommended eating a substantial meal prior to drinking that includes protein, fiber-rich carbohydrates, and healthy fats. "This combination helps slow alcohol absorption and reduces urges for convenience foods later," she said. She also advised keeping minimally processed snacks such as nuts, cheese, fruit, hummus, vegetables, and hard-boiled eggs readily available, and alternating alcoholic drinks with water to reduce total alcohol consumption.
"If you choose to drink, it's worth being mindful of this hormonal interplay," said Raubenheimer. "Having protein-rich whole foods readily available can help steer you away from ultra-processed foods. Think roasted chickpeas, smoked salmon, lean cold meats, prawns or oysters."
