Industrial Chicken Farming Drives 100-Fold Increase in Campylobacter Spread, Oxford Study Finds

Campylobacter jejuni (search) is the leading bacterial cause of foodborne gastroenteritis worldwide, causing 1.9 million illnesses and 13,000 hospitalizations in the U.S. in 2019 alone.
Genomic analysis revealed genetic adaptations in the bacterium linked to antimicrobial resistance, oxidative stress tolerance, and enhanced survival in modern production systems.
A landmark study from the Ineos Oxford Institute for Antimicrobial Research (search) (IOI) at the University of Oxford has revealed that the rapid expansion of industrial poultry farming has driven a more than 100-fold increase in the movement of Campylobacter, the world's most common bacterial cause of foodborne gastroenteritis. The findings, published in the Proceedings of the National Academy of Sciences (PNAS), draw on genomic analysis of nearly 2,800 bacterial samples collected from chickens and wild birds across 30 countries between 1979 and 2024.
"Our study provides compelling evidence that the rapid expansion of intensive poultry production has altered the ecology and evolution of Campylobacter jejuni (search), the leading bacterial cause of foodborne gastroenteritis worldwide," said Professor Sam Sheppard, Professor of Microbial Genomics and Evolution at the University of Oxford and senior author of the paper. "By concentrating billions of chickens in high-density production systems, we've inadvertently created ideal conditions for the bacterium to spread, diversify, adapt and, increasingly, move between domestic poultry and wild birds."
The Scale of Global Poultry Production
Since the 1960s, global chicken numbers have increased seven-fold to approximately 31 billion birds. Today, chickens account for around 70% of all bird biomass on Earth. While this expansion has enabled the production of affordable animal protein at scale, the study demonstrates it has also created near-perfect ecological conditions for bacterial pathogens to adapt and spread.
The research team found that vast, densely populated chicken flocks act as ecological "pathogen sponges," absorbing and amplifying bacterial strains from multiple sources. Mathematical modeling showed that once chicken populations reach a critical scale, strains originating in wild birds can become self-sustaining within poultry populations—even when those strains are initially poorly adapted to their new host.
Genetic Adaptations Driving the Threat
Genomic analysis identified specific genetic changes in Campylobacter associated with adaptation to the farmed chicken environment. These included genes involved in antimicrobial resistance, oxidative stress tolerance, metal acquisition, and motility—all traits that help the bacterium survive and thrive within modern poultry production systems.
"Industrial farming has created one of the largest animal habitats on the planet. Our findings provide new evidence that human-driven environmental change can increase the spread of infectious diseases," Sheppard said. "Understanding these evolutionary consequences is essential if we are to reduce future risks from zoonotic disease and antimicrobial resistance."
Oakem Kyne, DPhil student at the University of Oxford and first author of the paper, added: "As Campylobacter strains adapt to life in poultry, they can acquire traits that help them survive in challenging environments, including traits linked to antimicrobial resistance. Understanding how farming practices influence bacterial evolution is an important step towards reducing the burden of foodborne disease."
Public Health Burden Across Countries
Campylobacter causes more than 3.5 times as many gastroenteritis cases in the UK each year as all other monitored foodborne bacteria combined. In England alone, reported cases rose from 60,055 in 2023 to 70,352 in 2024—an increase of 10,297 cases, with the rate climbing from 104.1 to 121.9 reports per 100,000 people.
In the United States, the Centers for Disease Control and Prevention (CDC) estimates that 1.5 million people become ill from Campylobacter each year. The bacterium caused approximately 1.9 million foodborne illnesses and 13,000 hospitalizations in 2019. In France, 2023 data showed a higher incidence rate in children under 10 and in men. Canada reports 145,000 people affected by foodborne illness annually, while Australia recorded approximately 40,000 campylobacteriosis infections in 2024, making it the most commonly detected foodborne infection in the country.
A previous IOI study found that 80% of human Campylobacter infections in Oxfordshire, England, were linked to poultry meat, and that a significant share of those infections were resistant to antibiotics. Rising rates of antimicrobial resistance are making these infections progressively harder to treat, turning what was once a routine case of food poisoning into a serious medical concern.
A Call for Industry-Wide Action
Sheppard pointed to the poultry industry's success in curbing Salmonella through vaccination and coordinated biosecurity efforts as a model for addressing Campylobacter. "Similar ambition should now be directed towards Campylobacter, which remains the most common bacterial cause of gastroenteritis in many countries," he said. "Enhanced farm biosecurity can reduce Campylobacter in poultry flocks, but ultimately we should be aiming higher than simply managing contamination."
He added: "We've become accustomed to a containment level 2 pathogen entering millions of domestic kitchens every day, but familiarity shouldn't be mistaken for acceptability."
Despite the concerning findings, Sheppard emphasized there is no immediate reason for public alarm. "Campylobacter infection is already a well-recognized food safety issue, and the risks can be greatly reduced through good kitchen hygiene, avoiding cross-contamination, and thoroughly cooking poultry," he said. "However, the findings are a reminder that intensive livestock production doesn't just increase food production—it can also create new ecological opportunities for pathogens to evolve and spread."
