Nitrite is under investigation for the treatment of Heart Failure. Sodium nitrite is also widely used as a food preservative, particularly in processed meat products. In the NutriNet-Santé cohort, 73.3% of participants consumed sodium nitrite, largely from processed meat products. A 2025 analysis of this cohort (n=112,395, 7.9-year follow-up) published in the European Heart Journal found that higher dietary intake of sodium nitrite as a food additive was associated with a 16% higher incidence of hypertension, though the observational design cannot establish causation.
