healthy men and women aged 20 to 35 years (= young group) and healthy men and women aged 60 to 75 years (=old goup). BMI between 19 and 29 kg/m².
- regular intake of dietary supplements (multivitamins, carotenoids, trace elements) if subjects are not willing to abstain 3 days before intervention
- Active smokers (= 4 cigarettes/day)
- History of chronic diseases that affect gastrointestinal function
- pregnant women, lactating women
- acute, active upper or lower respiratory tract infection
- Drastic, unwanted weight loss (>5% last 6 months)
- (severe) food intolerances/allergies to tomatoes, carrots, herbs, gluten, nuts
- Diabetes Mellitus Type 1 and 2
- Obesity (BMI =30 kg/m²).
- Underweight (BMI < 19 kg/m²)
- Dementia
- Self-reported severe/active liver, kidney, rheumatic diseases, and malignant tumor diseases
- hyperlipidemia
- Medications that affect fat absorption/metabolism/fat transport
- cardiac pacemakers
- Consumption of foods rich in lycopene and ß-carotene as well as zinc and selenium (tomatoes, carrots, tomato sauce, ketchup, vegetable juices, sweet potatoes, pumpkin, persimmons, apricots, papaya, mango, nectarines, peaches, pears, sea buckthorn, kale, spinach, broccoli, arugula, peas, cabbage, corn, Brazil nuts, wheat germ) each 3 days before the respective intervention day
