Inclusion Criteria
Head and neck cancer patients undergoing major surgery
Age 18-75 years
Exclusion Criteria
Previous head and neck surgery
Previous head and neck radiation
Poor liver function(Total bilirubin > 3.5 mg/dl)
Poor renal function (Serum creatinine > 2.5 mg/dl)
Underlying immunodeficiency or taking immunosuppressive drug
Allergy to arginine, glutamine,fish oil, or soy protein
Pregnancy or breast feeding
