Blood glucose level after 15 and 30min eating 9g and 13.5g of coconut butter with boiled rice and cracker showed lower than the control value at the same time, significantly. In contrast, blood glucose level after 15, 30, 45 and 60min eating 18g of coconut butter and margarine showed lower than the control value at the same time, significantly.
