vegan diet before the beginning of the study; diagnosed metabolic diseases; regular medication intake; current therapy with folic acid or vitamin B12

- Primary Outcome Measures
Name Time Method At the beginning and at the end of the intervention, the following performance parameters are recorded by perfomance diagnostics: springiness (lower limb strength), upper limb strength and responsiveness. The diagnostics are carried out in the performance center of the Olympic training center Bavaria.<br><br>At the beginning and at the end of the intervention, 30 mL of whole blood are taken from the subjects to examine the following risk parameters: blood lipids (total cholesterol, LDL, HDL, TC).<br><br>Furthermore, various nutrient parameters (hematocrit, RBC, MCV, Hb, serum ferritin), serum zinc, magnesium (serum) as well as the nutrient supply (iron, zinc, magnesium, folate, vitamin B2 and vitamin B6) of the subjects are recorded by a trhee-day consumption weighting protocol before, during and at the end of the intervention. All foods and drinks consumed during these three days must be weighed and recorded.
